Packin' Some Protein

Boneless, skinless, and chicken breasts, oh my! OK that doesn't really work but I am just so thrilled at this recipe I found. And I came across it simply by googling "chicken breast recipes." I am very grateful to Google. And to Linda Larsen, who posted all of these great easy recipes (easy according to her, and probably to everyone else, but I'm kind of an amateur--hey, at least I made it through). Chicken crusted with honey mustard and pecans (I substituted walnuts) is nestling happily into my stomach right now, and there's still lots leftover. Very basic ingredients, not a lot of prep time, undeniably delicious. And how great, since chicken is so cheap and good for you, but is so easy to make dry and boring and useless? I will definitely be trying some of her other posts.

Afterthought: If you decide to try the recipe I made tonight, don't be afraid of the dilemma of cooking the chicken all the way through without burning the pecans/walnuts (I was very scared). Just make sure the chicken is pounded out thin enough before you start, and also don't worry if the nuts get dark brown--just stay away from black. Then you've got a charred lump of coal that nobody's going to want to eat.
